Bean salad with Asian dressing : Garden harvest

Beans are very easy to grow in New Zealand during the warmer season. We have Green, Purple and yellow beans in our garden. In the beginning, we only had an option to cook them or just stir-fry them.

We have the surplus amount of beans this year. I tried few different ways to cook them. Now this recipe became one of our favourite garden food. Love this crunchy spicy salad!

5 Ts fish sauce, 3Ts white vinegar, 4 garlic, 3 Red chilli, 1T sugar, 1T soy sauce, 3Ts sesame oil, bits of black pepper

*I like to boil the beans in whole. Some people like to cook them in pieces.

Boil the beans depending on your liking. I cook about 10minutes max. And cut them aound 3cm small pieces. I like to take off the top part with hand to get rid of the hard line of fibers.
Boil the beans until they become slightly crunch with a pinch of salt. I cook them about 10minutes max. And cut them around 3cm small pieces. I like to take off the top part with hand to get rid of the string of hard fibres on the beans.
Mix with the sauce and some chopped spring onions and Thai basil

  • It is very pleasant to cook with nice garden harvests. I think I have been cooked this bean salad more than 5 times this summer. The beans are very nice and crunch when it comes to the right its season and the tasty seasoning.
